Corn Salsa

I have to give credit to my boss for this recipe, which has become one of my favorite snacks.  If you enjoy fresh salsa, then give this a try.

Ingredients                                                                                                                                             ½ cup sugar
½ cup apple vinegar
½ cup canola oil
¼ cup Tiger Sauce
1 medium red onion, chopped
1 red pepper, chopped                                                                                                                            1 green pepper, chopped
1 can of corn, rinsed and drained
1 can of black eyed peas, rinsed and drained

Mix all wet ingredients together in medium size bowl.  Mix all of the vegetables together in a large bowl.  Pour the sauce over the salsa and mix everything together.

This salsa can be served with chips, over grilled chicken or salsa, or used in quesadillas.
