S’more’s Pudding Parfait
I have adapted this recipe from one posted on Sandra Lee’s webpage on FoodNetwork.com. You can make this as a quick dessert for your family or serve it to guests after a meal you share together.
3 cups of milk (I used 1%)
5.9 oz. box of chocolate pudding (try a dark chocolate pudding for deeper flavor)
approximately 10 graham crackers (I used low-fat graham crackers)
2 cups mini marshmallows
Prepare the pudding by mixing together the milk and pudding mix. Place the pudding in the refrigerator. Crush the graham crackers. You can put them in a Ziploc bag and use a rolling pin to crumble them, or you can break them up by hand. It’s important that you do not crumble them into crumbs, as you’ll want some texture for this dish.
Using wine glasses or parfait cups, layer the dessert by spooning pudding into the cup, topping it with graham crackers and marshmallows. Continue with this process until you have filled the cup. Makes approximately 4 servings.
