Quick and Easy Coleslaw
I am the only one in my house who enjoys coleslaw. Tonight, rather than purchase it from the deli counter, I decided to make my own homemade version. The slaw came out sweet and crisp, perfect atop the pulled chicken sandwich I made for dinner.
1 bag of chopped coleslaw mix (found by the pre-washed salad mixes in the produce department)
1 scant cup of reduced fat mayonnaise
1/4 cup sugar
1/4 cup honey, use more or less to your taste
salt and pepper, to taste
In a medium-sized bowl, mix together the mayo, sugar, honey, salt, and pepper. Taste the dressing to determine whether you need to add salt or pepper, based on your preference. Mix in the coleslaw mix, being sure to thoroughly coat all of the vegetables.
Refrigerate for approximately 30 minutes before serving, so the slaw is cold and the dressing has set.
